General Functions:
This Cook is a vital team member within the Village of Care and the therapeutic treatment modality of Work Therapy. The Cook is responsible for preparing menus and meals while maintaining high standards of nutrition, safety, and sanitation in the kitchen area. The Cook is also responsible for maintaining an updated list of food and related kitchen supplies needed on a regular basis as well as overseeing the work therapy team assigned to the kitchen.

Duties and Responsibilities; included but not limited to:
Responsible for following the menu based on a four week cycle that meets the highest nutritional needs of recovering patients.
Plan, prepare and serve balanced meals three times a day for approximately 28-36 patients.
Plan, prepare and have available nutritious snacks for patients.
Plan, prepare and serve special diets as nee! ded.
Research food sources that provide the highest qualit! y of food for the most economical price and ordering such foods in a timely manner to take advantage of sales, seasonal bargains, and donated subsistence foods.
Store foods from approved sources in compliance with Municipal Codes to ensure against cross-contamination.
Maintain high standards of sanitation in the kitchen area at all times taking special care to cook and serve foods at the proper temperature and utilize proper sanitation techniques on all utensils, cutting surfaces, food storage areas, and waste disposal areas.
Supervise kitchen work therapy residents and kitchen volunteers and train them in the proper methods of food handling, preparation, and sanitation.
Maintain familiarity with the Kitchen Manual regarding policies and procedures which are specific to the kitchen at the ErnieTurnerCenter.
Oversee Work Therapy component of the residents’ treatment plans as it relates to residents working the in kitchen.
Transport work therapy resi! dents to the food bank and Costco in order to model cost effective and health shopping.
Performs other related duties as needed and/or assigned.

Internal Relations
Required to maintain and comply with federal confidentiality laws as outline in 42 CFR, Part 2 and the Health Insurance Portability and Accountability Act (HIPAA).
Maintains a positive working relationship with CITC staff and supports management of the organization
Participates in scheduled external/internal meetings and training’s as requested

Job Responsibilities Related to Patient Privacy:
The incumbent is expected to protect the privacy of all patient information in accordance with CITC’s privacy policies, procedures and practices, as required by federal and state law, and in accordance with general principles of professionalism as a health care pr! ovider. Failure to comply with CITC’s policies and procedures on pati! ent privacy may result in disciplinary action up to and including termination of employment or membership or association with CITC.
The incumbent may access protected health information and other patient information only to the extent that is necessary to complete your job duties. The incumbent may only share such information with those who have a need to know specific patient information you have in your possession to complete their job responsibilities related to treatment, payment or other CITC operations.
The incumbent is encouraged and expected to report, without the threat of retaliation, any concerns regarding CITC’s policies and procedures on patient privacy and any observed practices in violation of the policy to the designated Privacy Officer.
The incumbent is expected to actively participate in CITC privacy training and is required to communicate privacy policy information to coworkers, students, patients and others in accordance with CITC policy.
Job Specifications:
Knowledge and competency in the methods and strategies used in institutional food preparation and serving.
Knowledge of basic nutrition and demonstrated ability to prepare special meals for patients with specific dietary needs.
Knowledge and competency in the methods and strategies used in processing, storing, preparing, and serving traditional Native foods.
Demonstrated ability to follow a written menu that meets the nutritional needs of recovering patients, and to judge food quantities necessary to meet those needs.
Demonstrated ability to store, prepare, cook and serve food in compliance with the Municipal Codes and safe food-handling practices.
Demonstrated ability to write a food supply order from the prepared menu, being mindful of seasonal food bargains and foods from the Food Bank of Alaska to minimize food costs without sacrificing quality.
Demonstrated ability to store, prepare, cook and serve food in ! compliance with the Municipal Code governing institutional kitchens, an! d the Field Guide for subsistence food items donated to the Center.
Demonstrated ability to operate all kitchen equipment in a safe manner to meet all Municipal Codes and OSHA standards.
Demonstrated ability to maintain effective and efficient working relationships with other staff and patients, and to provide orientation to meal preparation, safe food handling, and sanitary standards for kitchen volunteers.
Demonstrated ability to maintain written communication with the foodservice workers so that the menu remains consistent with the established 4-week cycle format and information about needed supplies is properly communicated.
Demonstrated ability to write a food supply order from the prepared menu, being mindful of seasonal food bargains, donated Native foods, and foods from the Food Bank of Alaska to minimize food costs without sacrificing quality.
Computer literate with experience in a Windows environment.
Demonstrated ability to prioritize work! related responsibilities and to work independently.
Demonstrated ability to coordinate and manage multiple tasks with attention to detail.
Demonstrated knowledge and ability to oversee and direct the work of others.
Demonstrated ability to work extended periods while standing and walking.
Required to have current TB immunization and/or verification incumbent is a “reactor.”

Qualifications:
High School Diploma or G.E D.
Six months experience in food service.
Certificate of Completion in Food Service Technology or other vocational training course in institutional food preparationpreferred.
Certificate or permit as a food service worker as issued by the Municipality or appropriate authority or ability to complete ServSafe training for proper food handling.
If needed, current CPR and First Aid will be provided.
If needed, current ServSafe training will be provided.
Voluntary immunization for HEP A&B will be offere! d/provided.
Must be able to lift a minimum of 20 pounds.
Curren! t five years of no felonies or substance abuse convictions.
Must have one year of continuous sobriety prior to hire if a recovering alcoholic or drug addict and participate in a self-help program.
Continued employment status will be contingent upon receipt of a satisfactory report from a state and federal background check.
Valid Alaska drivers license and insurable under CITC’s automotive insurance.

Hiring Preference:
Preference shall be given to eligible and qualified Alaska Native/American Indian applicants pursuant to P.L. 93-638 Indian Self-Determination Act.
